Roasted Brussels Sprouts

This is an easy recipe that doesn’t really require the three photos I’m posting about it, but what else will I do with them? I didn’t actually cook this–my dad made it while I took pictures. I didn’t grow up eating Brussels sprouts because my dad thought he didn’t like them. I believe I tried them once and was disappointed, so I have assumed I didn’t like them either. Roasting them made all the difference!

I don’t have measurements, but if you’ve ever roasted a vegetable this shouldn’t be too hard.


Take as many of the sprouts that you want to serve, and slice them all in half (lengthwise, so the leaves are attached to the stem and don’t end up creating a large Brussels salad).


Spread them on a cookie sheet or roasting pan and pour olive oil over them. Pour enough that they can all be lightly coated.

Add salt and pepper to taste, then give them a stir and put them in the oven at 400 degrees for about 10 minutes or so. (My dad actually cooked them under the broiler at 350, but I don’t think regular ovens let you choose the temp, so he said this would be the translation.) And that’s it! Dad, did I explain it right?

    I have never liked brussel sprouts myself … but maybe that's a challenge I should give C to see if we can tolerate them. Pretty pics. -R

    Brussel sprouts have always creeped me out a little, to be honest. They remind me of eating premature cabbage patch kid heads. But these do look delish…if you can get over the creepiness of it all. ~H

  6. So saying they are like little cabbages doesn't help a bit. πŸ™‚ I have never been able to bring myself to like brussel sprouts through the years. There are many other vegetables that have changed my mind over time, but I still struggle with these little guys. I have to say, though, that I have never had them roasted. Maybe that would actually cover up enough of the taste and texture to make them palatable! Hmmm…maybe you'll have to introduce me to this style sometime. πŸ™‚

  8. Actually, I love cabbage, but brussel sprouts are not little cabbages no matter how hard they try to be! LOL!

  9. OH! I thought you meant that comparing them to cabbages didn't entice since you don't like cabbage. Anyway, I really think they do taste like cabbage! I want to make them myself sometime, so I'll give you a heads up and you can come try. πŸ˜€

    Brussel Sprouts … or is it Brussels Sprouts (as in the country of Brussels)? … don't taste like little cabbages to me. I love cabbage, but these are just so bitter to me. I've had them a couple ways and it has been a while, in their defense, C agreed to try making them as an experiment. I just need to get them on a stalk like they sell at Trader Joe's or forget it. πŸ™‚ -R

    I thought they were bitter, too, but these weren't. Definitely like cabbage.

    Brussels, the city, yes. Geography was never my strong-suit. I was impressed I remembered it was a place! Still haven't been back to Trader Joe's for sprouts on stalk … But maybe today. πŸ™‚ Because I am so excited to try them again. Recently discovered I love sardines. Go figure. Now I'm slightly addicted, much to the disappointment of my kids' noses. C loves them, too! We prefer boneless skinless in olive oil if you are feeling brave. C likes them on Ritz while I am enjoying promoting Tostitos new Artisan garlic and black bean chips. Sooo good. Maybe they'll go with the Brussels sprouts, too! πŸ™‚ -R

    That's funny about sardines. I've never actually eaten them. Remember how Mom likes them and Grandma gave kipper snacks to her for Christmas?

    I haven't had Brussel sprouts for years, but made some a couple weeks ago! I roasted them with garlic and chopped walnuts. They were yummy.

    Well … I did let you know personally, but for those who are wondering … we tried making them and neither my husband, nor I like them still. I will say they were more tolerable than I remember … but maybe I'm just more tolerant. Anyway, an interesting side-effect was that we discovered our oldest child does adore them, which we'd never know if we hadn't tried making them. So it was all for something. They are good for you and worth a try, in case you remember wrong. Don't be afraid. As for “on stalk,” here is a link to a random chef website that I picked only because it has an okay picture showing them on stalk.     Never liked the little guys myself, but I would definitely be willing to try a roasted one. Probably doesn't help that my grandmother called them “brussel farts”
